Shelby's Bistro and Ice Creamery Opens in the Junction

Shelby’s Bistro and Ice Creamery. As Shelby quotes “The ribbon cutting is at 10:45 am and then a new icon opens on the corner of California Ave SW and SW Edmonds St!” We had a chance to sample some of the delicious food during Shelby’s soft opening over the weekend. The caesar salad was well-presented with crisp green lettuce, a tangy dressing, and was piled high with a generous amount of crispy croutons. The salmon burger had a delightful smoky finish nestled between two soft, pillowy buns. Lunch was finished with a scoop of chocolate cookie dough ice cream drizzled in caramel sauce.
